And just like that, school time is back! I’m creating a recipe calendar for the fall, getting ready to try, shoot and share lots of new ideas. It will be a busy season for us, and I know it will be for many of you as well. Today I’m sharing my favorite breakfast ideas to get your days off to a good start. You will also find some days that are good for getting up and walking, getting up early and easily, and spending a little more time at breakfast.

Oats are full of fiber, so they’re a healthy breakfast! However, if you’re like me, you run the risk of getting stuck in a rut. In college, I ate plain oatmeal every day. After four years, I couldn’t stay in the game. To avoid burning oats, be sure to vary your toppings! Any nut butter, fruit, dried fruit, yogurt, nuts, seeds or jam is good game. Change the way you prepare your oats. Make baked oatmeal or homemade granola, or make a big batch of a quick weeknight breakfast. While you’re at it, make a batch of homemade oat milk.

If you want to prioritize protein in your breakfast, eggs are a great choice. Breakfast, omelets, and fried eggs can get repetitive, so try one of the recipes below to switch things up. Make your own frittatas in muffin tins for a portable breakfast option. On days when you have more time, sit down to a big breakfast or hang out with your friends or family.

If you’re looking for some new, out-of-the-box breakfast ideas, the breakfast bowl might be just the thing for you. Almost everything goes into this category. When I make a savory dish, I add rice, farro, or cauliflower rice with a wet egg, vegetables (leftover roast, butternut squash, cauliflower, etc.) and a flavorful sauce like pesto or tzatziki. My sweet dish is very different. Sometimes I’m in the mood for tea pudding or a bowl of smoothies. Other days, I top quinoa with almond milk, cinnamon, and fresh fruit and call it a meal.

Light, comforting and slightly sweet, quick bread is a delicious breakfast. In the summer, I usually have some slices of zucchini bread in my refrigerator. In spring and winter, pumpkin and banana bread take its place. Enjoy with a thick slice of your favorite bread on its own, or with Greek yogurt and a bunch of seasonal fruit for an extra boost of energy.

Pancakes and waffles may not be something you cook every weekday morning, but unlike their cousin French toast, these breakfast foods keep well if you make them ahead of time and freeze them. After years of living in Austin, breakfast tacos are my favorite healthy breakfast. Usually, I scramble eggs with spinach and top them with avocado or guacamole, tomatillo salsa or cilantro sauce, and pico de gallo, if I have that on hand. Otherwise, I add roasted vegetables like sweet potato, shiitake or cherry tomatoes to my egg filling. I like to make this ahead of time so all I have to do in the morning is scramble some eggs and wrap everything in a tortilla.

Breakfast biscuits are the perfect breakfast on the go. Foods like flax, oats, nuts, seeds, and quinoa are packed with protein, healthy fats, and fiber. In addition to the fruits and vegetables below, I love the Banana Bread Cookies on page 35 of Love and Lemons Everyday. These breakfast recipes are great to make ahead and cool for busy mornings. To thaw, pop it in the microwave for 8-10 seconds, and out the door you go!

If you’re looking for tried and true easy breakfast ideas, toast is your thing! Place a slice of whole grain bread in the totaster, and top with your favorite seasonal toppings. I like to start with a dark spread and then add a piece of roasted or raw vegetables, fruits, and / or fresh flowers. I’m a fan of avocado toast, but hummus, ricotta, and nut butter are also great starting points for making delicious toast.

When I was growing up, chocolate chip muffins were a breakfast staple in our house. Muffins are still one of my favorite ways to start the day, but now I make my morning muffins a little healthier, using whole grain flour whenever possible, fruit mixes and natural sweeteners like maple syrup. Like other healthy breakfast recipes, muffins and scones freeze well. I always like to have a winter stash on hand!
